Ingredients

  • 2 lb Lamb
  • 3 large Onions
  • Half bunch celery
  • 6/7 medium potatoes
  • 8 carrots
  • 3 vegetable stock cubes
  • Thyme (to taste)

Method

  1. Fry off the lamb to seal in the juices.
  2. Put onions, celery, carrots and potatoes in a pot.
  3. Add the meat and veg stock plus thyme for flavour.
  4. Bring to the boil and simmer for about 2 hours.
