- 2 lb Lamb
- 3 large Onions
- Half bunch celery
- 6/7 medium potatoes
- 8 carrots
- 3 vegetable stock cubes
- Thyme (to taste)
- Fry off the lamb to seal in the juices.
- Put onions, celery, carrots and potatoes in a pot.
- Add the meat and veg stock plus thyme for flavour.
- Bring to the boil and simmer for about 2 hours.
